Chocolate Breakfast Biscuits

Ingredients
  

  • 1/2 cup almond flour
  • 1/8 cup coconut flour
  • 1/8 cup coconut sugar
  • 2 tbsp cacao (or cocoa)
  • 2 tbsp whey protein (I use Ascent whey chocolate, or sub for more coconut flour)
  • 1 tsp vanilla
  • 2 tbsp coconut oil (liquid)
  • 1/3 cup almond butter (I usually warm this with the coconut oil)
  • 1 egg
  • 1 tbsp baking soda
  • 1/4 cup chopped chocolate - I use Alter Eco Brown Butter Organic Chocolate (more or less to preference - listen to your heart)

Instructions
 

  • Preheat oven to 350 and grease or line your baking sheets,
  • Place all ingredients (except chopped chocolate) in a large bowl and blend until smooth. Add in chopped chocolate and fold dough until evenly distributed.
  • Place tbsp size balls onto baking sheet and flatten with palm to desired thickness. Bake for 14-16 minutes or until cookies are firm.
