Chocolate Breakfast Biscuits
(Paleo, low-carb, keto-friendly, grain-free, gluten-free)

- 1/2 cup almond flour
- 1/8 cup coconut flour
- 1/8 cup coconut sugar
- 2 tbsp cacao (or cocoa)
- 2 tbsp whey protein (I use Ascent whey chocolate, or sub for more coconut flour)
- 1 tsp vanilla
- 2 tbsp coconut oil (liquid)
- 1/3 cup almond butter (I usually warm this with the coconut oil)
- 1 egg
- 1 tbsp baking soda
- 1/4 cup chopped chocolate - I use Alter Eco Brown Butter Organic Chocolate (more or less to preference - listen to your heart)
Preheat oven to 350 and grease or line your baking sheets,
Place all ingredients (except chopped chocolate) in a large bowl and blend until smooth. Add in chopped chocolate and fold dough until evenly distributed.
Place tbsp size balls onto baking sheet and flatten with palm to desired thickness. Bake for 14-16 minutes or until cookies are firm.
